Sage nicely complements chicken, sausages, lamb and veal. Use sage also to season stuffing, casseroles, stews, salads and dressings. Substitute one tablespoon of fresh sage for one tablespoon of Pegasus Sage. Before adding to your cooking, crush the sage between your fingers to increase the herb's flavour.
